We’ll practice shaping both boules and pan loaves while discussing how dough strength, hydration, and fermentation influence the final shape and crumb.
We’ll also explore scoring and bread design, including how blade angle, depth, and pattern affect oven spring and the way your loaf opens as it bakes. Through guided practice, you’ll gain confidence creating clean, intentional scores, from classic ear-producing cuts to decorative patterns.
The workshop also covers starter troubleshooting and maintenance, helping you recognize signs of a healthy culture and diagnose common issues such as sluggish fermentation, excessive acidity, or weak rise. We’ll discuss feeding schedules, flour choices, and environmental factors that affect starter performance.
