This dough is something special, sifted hard red spring wheat, high hydration, and enriched with olive oil, light and crispy on the outside, and soft, tender, and airy on the inside. Funky ‘slipper’ shape! Leavened with natural ‘sourdough’ leavening, poolish - an overnight pre-ferment, and a pinch of commercial yeast- the combination adds different layers of flavor and lightness to the crumb. Ciabatta is one of my kids’ favorite loaves for snacking and makes a great sandwich!
