This dough is something special, sifted hard red spring wheat, high hydration, and enriched with olive oil, light and crispy on the outside, and soft, tender, and airy on the inside. Funky ‘slipper’ shape. Leavened with natural ‘sourdough’ leavening, poolish - an overnight pre-ferment, and a pinch of commercial yeast- the triple combo adds different layers of flavor and lightness to the crumb. Ciabatta makes a great sandwich!
