Spelt is the largest of the farro family and considered an Ancient Grain. Spelt has low gluten and high protein content and is nutty, slightly sweet, with a great chew when cooked as a whole grain. This week, as a nod to everything else sprouting and growing in our gardens! we are sprouting spelt to bring out more digestible nutrients in our grain, then adding the sprouted grains back in to the mix, which also give a great texture to your loaf.
