At first, I bought a mini counter-top mill to mill our own dent corn into polenta... The scent of freshly milled corn is absolutely delicious- like summer fields and sunshine to me.. As fun as it is to mill, I've left that to the true millers at Wild Hive, who take care of that for us, producing an even better polenta ready to go. This loaf is not cornbread and not sourdough but perhaps a happy combination. Paired with heirloom toasty pepitas this week, it is one of our first and most favorite porridge loaves.
