We always like to keep a straight up old fashioned sourdough on the menu, classic and delicious with everything. The Katonah wheat is a blend of whole wheat and sifted wheat, we blend 5 milled variations of hard red wheat and soft white wheat to make the Katonah Wheat what it is. Completely naturally leavened, with a long fermentation, and will easily last a week before drying out if stored properly. Available in small, or regular sized hearth (round boule) or pan (baked in a loaf pan for a softer crust on 3 sides and potential for traditional sandwich slicing)
