When I lived in France, I left Paris to take the TGV to the south, and met my parents in the town of  Collioure. We may have visited a medieval castle and a museum to see works by Matisse, but I remember the market, and of course the cheese and the bread most of all.

 A blend of wheats and rye, a hint of buckwheat. Earthier but sweet, with a crusty exterior and a moist crumb on the inside. Best for ripping into and pairing with your cheese and sausages after a happy day exploring.
