The Miche. A blend of freshly milled wheat and rye flours, and both a rye sourdough starter for extra tang, and a wheat starter for strength, this loaf is a union of the best of both wheat and rye bread characteristics- flavorful, complex, yet neutral enough to complement a meal and not overpower. Miche loaves were baked traditionally in a large 2 kilo- 5 kilo boule, to last a week, incorporated into meals in different ways, as the flavor develops over the week. We have the more traditional 2 kilo boule available, as well as a 900g boule.
